Lemon Linguine Recipe

Ingredients
  • 2/3 c heavy cream .
  • 2 egg yolks .
  • 1/4 c sliced fresh parsley .
  • 1/2 c grated parmesan cheese .
  • 1 lb linguine .
  • 1/4 c butter .
  • 2 lemons, juice & zest of, grated

Directions
  • Step #1 Heat cream just to the boiling point in a small, heavy saucepan over medium-high heat; remove this from heat.
  • Step #2 In a small bowl, whisk egg yolks.
  • Step #3 Add hot cream, a dribble at a time, being careful not to curdle egg yolks.
  • Step #4 Stir in Parmesan cheese, lemon juice & lemon zest; set aside.
  • Step #5 Cook pasta al dente.
  • Step #6 Melt butter In a large-ish saucepan over med-heat/flame.
  • Step #7 Add pasta & toss to coat.
  • Step #8 Add lemon mixture & toss to mix.
  • Step #9 Cook for about 1 min, just to marry ingredients.
  • Step #10 Remove from heat.
  • Step #11 Add parsley, toss & serve.
