Crabmeat Ravioli With Clam Sauce Recipe

Ingredients
  • 1 (14 1/2 oz) can no-salt-added sliced tomatoes .
  • 24 wonton wrappers .
  • Sauce .
  • 1 tbsp olive oil .
  • 1 tbsp sliced fresh chives .
  • 1/8 tsp salt .
  • 1/4 tsp crushed red pepper flakes .
  • 1 tbsp sliced fresh oregano .
  • 2 garlic cloves, minced .
  • 1 (28 oz) can crushed tomatoes, undrained .
  • 1 (10 oz) can clams, drained .
  • Ravioli .
  • 2 tbsps sliced fresh flat-leaf parsley .
  • 1/2 lb lump crabmeat, drained & shell pieces removed .
  • 2 tbsps panko .
  • 1/4 tsp black pepper .
  • 1/4 tsp salt .
  • 1/2 c part-skim ricotta cheese .
  • 1/2 c finely sliced red bell peppers .
  • 1/3 c finely sliced onions

Directions
  • Step #1 To prepare sauce, heat olive oil in a Dutch oven over medium-high heat.
  • Step #2 Add onion, & sauté 3 mins or until tender.
  • Step #3 Add garlic, & sauté 1 min.
  • Step #4 Add crushed & sliced tomatoes; bring to a boil.
  • Step #5 Reduce heat, & let simmer 30 mins.
  • Step #6 Add the parsley, 1/4 tsp salt, oregano, crushed red pepper, black pepper, & clams; simmer for 10 mins.
  • Step #7 Remove from heat, & set aside.
  • Step #8 To prepare ravioli, mix crab, chives, sliced red bell pepper, panko, & 1/8 tsp salt in a medium bowl.
  • Step #9 Add ricotta; stir carefully to mix.
  • Step #10 Spoon about 1 tbsp crab mixture into center of each wonton wrapper.
  • Step #11 Moisten edges of wrapper with water.
  • Step #12 Fold in half, pinching edges together to seal & create a half-moon shape.
  • Step #13 Repeat procedure with remaining wonton wrappers & crab mixture.
  • Step #14 Fill a large Dutch oven with water; bring water to a boil.
  • Step #15 Add half of ravioli; cook 4 mins or until done.
  • Step #16 Remove ravioli from pan with a slotted spoon; keep warm.
  • Step #17 Repeat procedure with remaining ravioli.
  • Step #18 Serve ravioli as soon as possible with sauce.
