Step #3 Heat butter with oil In a large-ish skillet over medium-high heat.
Step #4 Spice up the chicken with salt & pepper, then add to the skillet; cook on both side until lightly browned, then place the chicken skin-side up into the baking dish (leave the drippings in the pan).
Step #5 Add in the onion, celery, garlic & cayenne pepper (if using) adding in a little more oil if needed; sate for about 3 mins; stir in the the cranberry sauce & BBQ sauce; bring to a light simmer, stirring until completey mixd, then pour over the chicken.
Step #6 Bake uncovered for about 50 mins or until chicken is tender & cooked through, basting with the sauce a couple times during baking.
