Spanish Inspired Frittata Recipe

Ingredients
  • 2 russet potatoes .
  • 1 onion, medium to large size, sliced .
  • 1 garlic clove, sliced .
  • 2 tsps thyme .
  • 8 large eggs .
  • 1 tomato, sliced .
  • 1 1/2 c cheddar cheese, grated .
  • 2 tbsps parsley .
  • salt & pepper .
  • 1/4 c olive oil

Directions
  • Step #1 Set oven to 325°F.
  • Step #2 Peel potatoes & cut in half lengthwise.
  • Step #3 Then cut each half into slivers about the thickness of a fat coin.
  • Step #4 Using an oven-safe pan, garlic, sautee the oil, potatoes, parsley, onion, thyme.
  • Step #5 While frying the vegetables, beat eggs with a generous amount of salt & some pepper.
  • Step #6 Set aside.
  • Step #7 When potatoes are half-way done, add tomato & continue to sautee until potatoes & tomatoes are fully cooked.
  • Step #8 This means that the juices that the tomatoes give-off are pretty well evaporated.
  • Step #9 The vegetables should be tender with not too much moisture in the pan, otherwise the eggs won't set as well.
  • Step #10 Lightly press the potato mixture down into the pan to form a flat layer.
  • Step #11 Pour eggs over the potatoes.
  • Step #12 You can keep the burner on, but the eggs don't really cook at this step.
  • Step #13 Evenly sprinkle grated cheddar cheese on top of eggs.
  • Step #14 Put pan in the oven & bake this until the eggs set, about 20 mins.
  • Step #15 Cut into slices & serve.
