White Bean And Collard Greens Soup Recipe

Ingredients
  • 2 (14 oz) cans reduced-sodium fat-free chicken broth or chicken broth .
  • 1/2 c pinot grigio wine or other light white wine (drink the rest of the bottle with the soup!) .
  • 1 (15 1/2 oz) can great northern beans, rinsed & drained .
  • 1/4 tsp salt .
  • 4 c finely shredded collard greens (about 6 oz) .
  • 2 tsps minced fresh thyme .
  • 1/2 tsp fresh ground black pepper .
  • 1 c finely sliced yellow onions .
  • 3 garlic cloves, minced .
  • 1 tbsp olive oil

Directions
  • Step #1 Heat oil in a Dutch oven over medium-high heat.
  • Step #2 Add onion & garlic; saute for 5 mins or until onion is tender.
  • Step #3 Add wine, pepper, & salt.
  • Step #4 Reduce heat; simmer 5 mins or until liquid almost evaporates.
  • Step #5 Add greens, thyme, & broth.
  • Step #6 Cover up, reduce heat, & let simmer 8 mins or until greens are tender.
  • Step #7 Add beans; simmer 5 mins or until thoroughly heated.
