Prosciutto-wrapped Asparagus Recipe

Ingredients
  • 1 tbsp sliced fresh flat-leaf parsley .
  • 16 asparagus spears .
  • 4 slices prosciutto .
  • 1/8 tsp fresh ground black pepper .
  • 1/2 tsp Dijon mustard .
  • 1/4 c sour cream .
  • 1 egg, hard-boiled, peeled, & finely sliced .
  • 1/4 tsp salt, plus more to taste .
  • 1/4 tsp finely grated fresh lemon zest .
  • 2 tsps fresh lemon juice

Directions
  • Step #1 Snap woody ends off asparagus spears.
  • Step #2 In a large frying pan, bring 3/4 c water to boil.
  • Step #3 Add salt & trimmed asparagus, cover, & cook this until asparagus is tender, about 4 mins.
  • Step #4 Drain, dry & let cool.
  • Step #5 In a small bowl, parsley, lemon juice, mustard, lemon zest, mix sour cream, sliced egg, & pepper.
  • Step #6 Add salt to taste.
  • Step #7 Lay 4 asparagus spears on each piece of prosciutto & roll up.
  • Step #8 Repeat to form 4 bundles.
  • Step #9 Serve with sauce.
