Christmas Special Fruitcake Recipe

Ingredients
  • 1/2 tsp baking powder .
  • 3 c coarsely sliced brazil nuts or walnuts or pecans or hazelnuts .
  • 1/2 tsp salt .
  • 3/4 c sugar .
  • 1 c halved maraschino cherries .
  • 3/4 c all-purpose flour .
  • 3 eggs .
  • 1 tsp vanilla extract .
  • 1 lb pitted dates, coarsely sliced (about 2 full c)

Directions
  • Step #1 In a mixing bowl, mix nuts, dates & cherries.
  • Step #2 In another bowl, sugar, mix flour, baking powder & salt; stir in theto nut mixture until nuts & fruit are well coated.
  • Step #3 Beat eggs until foamy; stir in the vanilla.
  • Step #4 Fold into nut mixture & mix well.
  • Step #5 Pour into a greased & waxed paper lined 9 inch by 5 inch by 3 inch loaf pan.
  • Step #6 Bake at 300°F for 1 hr & 45 mins.
  • Step #7 Cool for 10 mins; remove this from pan to a wire rack.
  • Step #8 Yield: 24 servings.
  • Step #9 Cake will get softer overnight.
