Jamaican Jerk Marinade Recipe

Ingredients
  • 1/4 c olive oil .
  • 2 large shallots, finely minced .
  • 1 tbsp fresh ginger, finely minced .
  • 1/2 tsp ground nutmeg .
  • 1 tbsp dark brown sugar .
  • 6 scallions, greens only, thinly sliced .
  • 2 large garlic cloves, finely minced .
  • 1/4 tsp cayenne pepper .
  • 1 lime, juice of .
  • 1 tsp ground black pepper .
  • 1/2 c fresh orange juice .
  • 1/4 c red wine vinegar .
  • 1 tbsp ground allspice (use whole allspice berries, lightly toasted in a skillet, then ground fine) .
  • 1/4 c soy sauce .
  • 1 tbsp fresh thyme leaves or 1 tsp dried thyme .
  • 1 tbsp scotch bonnet peppers, seeded ribbed & finely minced .
  • 1 tsp ground cinnamon

Directions
  • Step #1 In a bowl, mix scallion greens, ginger, shallots, garlic, & Scotch Bonnet pepper.
  • Step #2 In another bowl, dark-brown sugar, thyme, cayenne, nutmeg, mix allspice, cinnamon, black pepper, salt & pepper.
  • Step #3 Mix thoroughly.
  • Step #4 Whisk in orange juice, vinegar, lime juice, & soy sauce.
  • Step #5 Slowly drizzle in oil, whisking constantly.
  • Step #6 Add the reserved scallion mixture; stir this to mix.
  • Step #7 Let rest at least one hr.
  • Step #8 Wash chicken, or fish well, pork, pat dry & place this in a bowl.
  • Step #9 Add sauce; rub in well.
  • Step #10 Cover up & put in the fridge overnight.
  • Step #11 Before cooking, scrape paste off of the meat.
  • Step #12 Grill over charcoal.
  • Step #13 You may add water-soaked allspice berries to the coals for smoke & extra flavor.
  • Step #14 Serve with Jamaican "rice & peas".
