Sour-cream Pancakes Recipe

Ingredients
  • 1/2 tsp salt .
  • butter or margarine, for cooking pancakes .
  • fresh raspberries (optional) .
  • 1/4 c granulated sugar .
  • 1 tbsp baking powder .
  • 1 1/2 c milk .
  • 2 tbsps butter or margarine .
  • 1 c regular sour cream or light sour cream .
  • 1 tsp vanilla .
  • 2 eggs .
  • fresh blueberries (optional) .
  • 2 c all-purpose flour

Directions
  • Step #1 Microwave 2 tbsp (30 mL) butter in a small bowl until melted.
  • Step #2 In a large bowl, stir flour with sugar, using a fork, baking powder & salt.
  • Step #3 Make a well in centre.
  • Step #4 In a medium bowl, sour cream, whisk eggs with milk, melted butter & vanilla.
  • Step #5 Pour into flour mixture & stir just until mixed.
  • Step #6 Immediately melt about 1 tsp (5 mL) butter In a large-ish frying pan set over med-heat/flame.
  • Step #7 (Or save time by cooking on a large griddle or simultaneously in 2 pans.
  • Step #8 ) Use a 1/4-c (50-mL) measure to pour batter into hot pan.
  • Step #9 Depending on size of pan, add 1 to 3 more pancakes.
  • Step #10 Cook until surfaces are covered with bubbles & edges are lightly browned, from 2 to 3 min Turn & continue to cook this until pancakes are golden, from 2 to 3 min Place on a plate & keep warm in a low-temperature oven while cooking remaining pancakes.
  • Step #11 Delicious drizzled with maple syrup & scattered with fresh berries.
  • Step #12 Great with bacon or sausages.
