Country Pancakes Recipe

Ingredients
  • 1 tbsp baking powder .
  • 1 egg, separated if desired .
  • 2 tbsps melted butter (to brush on pancakes) .
  • 3/4 tsp salt .
  • 1 c club soda (plus extra as needed) .
  • 1 tbsp sugar .
  • 1/2 c dry milk or dry buttermilk .
  • 9 tbsps hot cereal (dry) .
  • 1-2 tbsp bacon grease (optional) .
  • 1 tbsp instant malted milk powder .
  • 3 tbsps melted butter (for batter) .
  • 1 tsp vanilla .
  • 1 c flour

Directions
  • Step #1 Melt butter in microwave first, so that it will cool a little before mixing into batter.
  • Step #2 Preheat griddle to medium-high.
  • Step #3 If the griddle is not non-stick, lightly oil it first.
  • Step #4 Optional: If desired, separate the egg & whip the egg white.
  • Step #5 This will help make the pancakes extra light & fluffy in texture.
  • Step #6 I use a little hand-held mixer for this step.
  • Step #7 I always do this because it makes such a big difference.
  • Step #8 In a good-sized mixing bowl, whisk together the dry ingredients.
  • Step #9 In a small separate bowl, whisk egg yolk, vanilla & melted butter.
  • Step #10 Combine the two mixtures in the larger bowl & mix.
  • Step #11 Add club soda & egg whites & carefully fold into batter.
  • Step #12 Be careful not to over-mix at this point.
  • Step #13 If you did not separate the egg, you might need to use more club soda to reach the desired consistency.
  • Step #14 If you did separate the egg, the batter will be thicker than normal pancake batter.
  • Step #15 I like to fry the pancakes in bacon grease, but you can use regular vegetable oil if you prefer.
  • Step #16 Pour about 1/3 c for each pancake & brown on both sides.
  • Step #17 Brush the remaining melted butter on each pancake as you stack them.
  • Step #18 I keep the pancakes on an oven-proof platter in the oven on 200 degrees while I get all of them cooked.
  • Step #19 You will probably need to reapply the oil or bacon grease to the griddle.
  • Step #20 If batter thickens while you finish the bacon or frying the first few batches, add the reserved club soda.
  • Step #21 Unused batter can be kept covered in the fridge to use in the next few days.
  • Step #22 If it becomes too thick, add a little milk.
