Pear, Date And Cream Cheese Muffins Recipe

Ingredients
  • 1 pear, peeled, cored & sliced .
  • 1/2 c fresh dates, pitted & sliced .
  • 1 egg .
  • Cream cheese filling .
  • 1/2 c unsalted butter, softened .
  • 2 tsps baking powder .
  • 1/2 c light cream cheese, softened .
  • 1/2 c brown sugar .
  • 2/3 c low-fat milk .
  • 1 pinch salt .
  • 2 c flour, sifted .
  • Muffins .
  • 1/4 c honey

Directions
  • Step #1 With the rack in the middle position, preheat the oven to 350°F Line 8 muffins c with paper or silicone liners.
  • Step #2 Cream cheese filling:.
  • Step #3 In a bowl, whisk together the cream cheese & honey.
  • Step #4 Set aside.
  • Step #5 Muffins:.
  • Step #6 In a bowl, mix the flour, baking powder & salt.
  • Step #7 Set aside.
  • Step #8 In another bowl, cream the butter & brown sugar with an electric mixer.
  • Step #9 Add the egg & beat until smooth.
  • Step #10 With a wooden spoon, stir in the the dry ingredients, alternating with the milk.
  • Step #11 Stir only until the flour is moistened.
  • Step #12 Add the pear & dates.
  • Step #13 Spoon the batter into the muffin c.
  • Step #14 Using the backside of a spoon, make a hole in the centre of each muffin & fill with 1 tbsp of the cream cheese mixture.
  • Step #15 Bake until a toothpick inserted in the centre of a muffin but without touching the filling comes out clean, about 35 mins.
  • Step #16 Remove the muffins from the pan, place on a cake rack, cover with a clean tea towel & let cool.
