French Onion Pork Tenderloin Medallions Recipe

Ingredients
  • 1 red bell pepper, thinly sliced .
  • 1 tbsp worcestershire sauce .
  • 1 (12 oz) pork tenderloins .
  • 1 1/2 c beef stock .
  • 2 tsps canola oil .
  • 2 large onions, thinly sliced .
  • 1/4 tsp pepper .
  • 2 tsps sliced fresh rosemary .
  • 2 garlic cloves, minced .
  • 1/4 tsp salt

Directions
  • Step #1 Using chef’s knife trim all fat from the tenderloin.
  • Step #2 Cut tenderloin into 1 inch medallions & sprinkle with rosemary & half each of the salt & pepper.
  • Step #3 In large non-stick skillet heat half of the oil over medium high heat & brown pork in batches if necessary.
  • Step #4 Remove to plate.
  • Step #5 Return skillet to heat & add in the remaining oil.
  • Step #6 Cook onions, stirring for about 8 mins or until beginning to turn golden.
  • Step #7 Reduce heat to medium & cook, stirring for about 10 mins or until very soft & golden.
  • Step #8 Add red pepper & garlic & cook for 2 mins.
  • Step #9 Add stock & Worcestershire sauce & remaining salt & pepper.
  • Step #10 Bring to boil & boil for 5 mins or until reduced by half.
  • Step #11 Return pork to skillet & turn to coat in sauce for about 2 mins or until a hint of pink remains in pork.
