Step #2 Beat the egg whites in a clean dry bowl until soft peaks form.
Step #3 Add the sugar slowly, beating well after each addition, until thick & glossy with stiff peaks.
Step #4 stir in the the vanilla.
Step #5 Line a tray with baking papaer & spoon the mixture into six small nests on the tray.
Step #6 Bake for 20 mins, then reduce the oven to 120oc (250oF/Gas 1/2) & bake for 10 mins Turn off the ovenand leave the pavlovas to cool in the oven with the door ajar.
Step #7 To make the lemon curd, put the lemon rind, lemon juice, sugar, eggs & butter in a heatprood bowl & whisk together.
Step #8 Place the bowl over a pan of barely simmering water, making sure the base of the bowl is not sitting in the water.
Step #9 Stir for about 15 mins, or until the curd is thick - do not allow it to boil.
Step #10 Lat plastic wrap on the surface & leave to cool.
Step #11 Fold on the whipped cream athrough the curd.
Step #12 Spoon into the pavlovas & top this with banana, mango & passionfruit.
