Step #1 In a heavy bottom pot melt oil & butter over high heat add the brown sugar & the onions from the vadillas to the red onions lower heat to medium.
Step #2 Cook slowly stirring every once in awhile until caramelization begins at which point the onions are cooked until melting the sugars in the onions, thus causing browning.
Step #3 About 30 mins.
Step #4 Add the shallots & garlic cooking for 5 more mins.
Step #5 If you have time go 30 mins more of cooking to bring out the complex flavors of the onions sugars.
Step #6 Sprinkle top the flour over the caramelized onions & stir in the completely.
Step #7 Add thyme, bay leaf, rosemary, salt & pepper.
Step #8 Deglaze with sherry & champagne.
Step #9 Add broth & let simmer 20 mins.
Step #10 Remove bay leaf.
Step #11 Place the soup crocks or ramekin on a shallow baking pan.
Step #12 Soup evenly into ramekins.
Step #13 Place bread lightly on top & place cheese on bread.
Step #14 On the baking pan right along side the ramekins but not touching sprinkle the parmesan cheese in 6 piles.
Step #15 Broiled in a ramekin until gruyere is melted & bubbly.
Step #16 Keep an eye on it! The cheese on the soup may be done before the parmesan crisps are.
Step #17 So remove the soup while the crisp brown.
Step #18 They will be golden & soft when done.
Step #19 Remove carefully to a dish & they will crisp up before you know it! Serve along side the soup which is garnished with chives & scallions.
