Cheddar Potato Casserole Recipe

Ingredients
  • 1/2 tsp black pepper (or to taste) .
  • 4 large baking potatoes, peeled & coarsely sliced .
  • 2 tbsps fresh chives, sliced .
  • 1/2 tsp garlic salt (or to taste) .
  • 1/2 c cheddar cheese, shredded .
  • 1 1/2 oz cream cheese, softened .
  • 1/2 tsp onion salt (or to taste) .
  • 1 medium tomato, thinly sliced .
  • 1/2 c sour cream or French onion dip

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Place potatoes in a medium sauce pan & add enough water to cover.
  • Step #3 Cook over medium-high heat until tender (about 15 mins).
  • Step #4 Drain potatoes, return to saucepan & mash in pan.
  • Step #5 Add sour cream & cream cheese to saucepan.
  • Step #6 Whip potatoes with a wire whisk (or electric hand-held mixer) until well mixed.
  • Step #7 Mix in onion salt, garlic salt & pepper.
  • Step #8 Spoon potato mixture into a casserole dish.
  • Step #9 Top with cheddar & bake for 20 mins.
  • Step #10 Arrange tomato slices on top of casserole & sprinkle with chives.
  • Step #11 Bake 5 mins longer.
