Persimmon Baked Pudding With Tart C
Ingredients
  • 1/2 tsp nutmeg .
  • 1 c persimmon pulp .
  • 1 egg .
  • 1/2 c walnuts .
  • 1/2 c shortening .
  • 1 tsp baking soda .
  • 1 c sugar .
  • 1/2 c raisins .
  • 1/2 tsp cinnamon .
  • 1/2 tsp salt .
  • 1/2 tsp ground cloves .
  • 2 c flour

Directions
  • Step #1 mash pulp through sieve & measure.
  • Step #2 Then disolve the soda in the pulp.
  • Step #3 Sift & measure flour, spices & salt together.
  • Step #4 add small amount of flour to raisins & nuts.
  • Step #5 cream shortening & sugar together then add beaten egg.
  • Step #6 add pulp mixture & dry ingredients mix well.
  • Step #7 add nuts & raisins.
  • Step #8 drop on greased cookie sheet & bake in oven heated to 400F degrees for 14 mins.
  • Step #9 cookies keep well.
