Sugar Free/wheat Free/no Fake Sweeteners Cheesecake Recipe

Ingredients
  • 1/2 c fresh mashed bananas (or 1 jar banana baby food) .
  • 2 c sour cream .
  • 1/4 c mashed bananas or banana baby food .
  • 6 tbsps butter, melted .
  • TOPPING .
  • FILLING .
  • 1 tsp vanilla .
  • 2 tsps vanilla .
  • 1/2 c almonds .
  • 2 tbsps unsweetened flaked coconut .
  • 4 eggs .
  • 24 oz cream cheese .
  • 1/2 c pecans .
  • CRUST .
  • 1 c rolled oats .
  • 2 tbsps vanilla .
  • 2 tbsps cinnamon

Directions
  • Step #1 For the Crust: Toast all ingredients (except the butter) in a pan at 350F for 15-20 mins, until golden.
  • Step #2 Process the mixture in a mixer or food processor/blender until finely sliced.
  • Step #3 Separate the mixture into two 8" pans.
  • Step #4 Add 3 tbl melter butter to each pan & mix well.
  • Step #5 Press into pan to form the crust.
  • Step #6 For the filling: Soften the cream cheese, & then whip with a beater until smooth.
  • Step #7 Add eggs, banana, vanilla, & beat until smooth & creamy.
  • Step #8 Pour cheese mixture into the crust lined pans, dividing equally.
  • Step #9 Bake at 375F for 30 mins.
  • Step #10 For the topping: Stir together all the topping ingredients.
  • Step #11 Spread over baked cheese filling, dividing equally.
  • Step #12 Bake at 375F for another 20 mins.
