Lemon Drops Recipe

Ingredients
  • 1/2 tsp baking soda .
  • sliced yellow gumdrops .
  • 1/4 c sugar .
  • 1/3 c lemon juice, fresh squeezed .
  • 4 tsps finely shredded lemon peel .
  • 2 c all-purpose flour .
  • 2 tbsps lemon juice, fresh squeezed .
  • coarse sugar .
  • Lemon Glaze .
  • 1 egg .
  • 1/8 tsp salt .
  • 3/4 c sugar .
  • 1/2 c butter, softened .
  • 1/2 tsp baking powder .
  • 1/2 c sour cream

Directions
  • Step #1 In a big bowl, beat butter (use an electric mixer on medium to high speed) for 30 seconds.
  • Step #2 Add in the sugar, lemon peel, baking soda, baking powder, & salt; beat until mixd.
  • Step #3 Beat in the egg, sour cream, & lemon juice until mixd.
  • Step #4 Beat in as much of the flour as you can with the mixer; stir in the any remaining flour using a wooden spoon.
  • Step #5 Drop dough by slightly rounded tbspfuls 3 inches apart onto an ungreased cookie sheet.
  • Step #6 Bake at 375° for 8 mins or until tops are firm.
  • Step #7 Meanwhile make glaze: in a small bowl, stir this together the sugar & lemon juice.
  • Step #8 When cookies are done, transfer cookies to a wire rack; brush tops of warm cookies with Lemon Glaze.
  • Step #9 Sprinkle top with coarse sugar & decorate with sliced gumdrops.
  • Step #10 To store: place this in layers separated by waxed paper in an airtight container; cover; store at about room temp up to 3 days or freeze up to 3 months.
