Mexi Black Bean Lasagna Rolls Recipe

Ingredients
  • 7 lasagna noodles, cooked .
  • 1 1/2 c monterey jack cheese, shredded (or use cheddar cheese or to taste) .
  • salt & black pepper .
  • 1 small onion, finely sliced (or use green onion) .
  • 1 (15 oz) container ricotta cheese (or creamed cottage cheese) .
  • 2 c black beans (rinsed & well drained) .
  • 1 1/4 c monterey jack cheese, shredded (or use cheddar cheese) .
  • 2 c enchilada sauce (or use salsa) .
  • 2-3 tbsps taco seasoning mix (or use chili powder) .
  • 2 tsps fresh minced garlic .
  • 1 (4 oz) can sliced green chilies

Directions
  • Step #1 Set oven to 350 degrees.
  • Step #2 Grease an 11 x 7-inch baking dish.
  • Step #3 In a bowl mix all ingredients except the enchilada sauce & 1-1/2 c shredded cheese; mix well to mix & adjusting taco seasoning, salt & pepper to taste if needed.
  • Step #4 Divide & spread the mixture over one side of each cooked lasagna noodle.
  • Step #5 Roll up noodles jellyroll fashion beginning at narrow ends.
  • Step #6 Spread a small amount of enchilada sauce into the bottom of the baking dish.
  • Step #7 Place the rolled noodles into prepared baking dish on top of the sauce.
  • Step #8 Drizzle with remaining enchilada sauce.
  • Step #9 Bake uncovered for 25-30 mins, remove this from oven then sprinkle with 1-1/2 c shredded cheese (or to taste) return to oven for a few mins to melt cheese.
