Ginger Orange Mango Filling ( For Crepes) Recipe

Ingredients
  • 3 tbsps orange zest .
  • 2 tbsps orange juice .
  • 3/4 c sugar .
  • 1 c unsalted margarine .
  • 4 tsps grated gingerroot .
  • 2 c mangoes, sliced thin

Directions
  • Step #1 Heat 2 tbsps of margarine In a large-ish sauté pan over med-heat/flame.
  • Step #2 When bubbling, add the fruit & sauté 2 to 3 mins until softened.
  • Step #3 Stir in all remaining ingredients & put set aside to cool on the counter or in the refrigerator.
  • Step #4 When cool, fill crepes for desired amount.
  • Step #5 Top with non-diary whipped cream or sorbet.
