Roasted Shallots Recipe

Ingredients
  • 2 1/2 c olive oil .
  • 1/2 lb shallots, peeled

Directions
  • Step #1 Place shallots & oil in a bread loaf pan.
  • Step #2 You may need to add more oil to cover all the shallots.
  • Step #3 Make sure they are all covered.
  • Step #4 Cook in a 250F oven until the shallots are soft & have turned a little brown.
  • Step #5 Remove shallots from oil & set aside, uncovered in the fridge to cool completely before you cover them.
  • Step #6 Pour oil through a coffee filter & let cool in the fridge before you bottle it.
  • Step #7 Keep chilled.
  • Step #8 I don't know how long it will actually last before going bad, because it only lasts about 2 weeks in my house.
  • Step #9 BE ADVISED! SOME LOCAL HEATH DEPARTMENTS CLAIM THAT THERE IS A RISK WHEN MAKING HOMEMADE FLAVORED OILS.
  • Step #10 To help avoid any risk of illness I suggest that you treat this entire procedure like you are doing home canning.
  • Step #11 SANITIZE EVERYTHING THAT WILL COME INCONTACT WITH FOOD! I can't stress this enough.
  • Step #12 Botulism is nothing to mess around with.
  • Step #13 I have never had a problem with my flavored oils.
  • Step #14 Always smell them before you use them.
  • Step #15 If there is any doubt about the quality, TOSS IT! You can't be too careful.
  • Step #16 Be careful & enjoy.
