Filet Mignon With Mushrooms And Madeira Recipe

Ingredients
  • 20 oz filet mignon steaks (each about 3/4 inch thick) .
  • 1 1/2 c canned beef broth .
  • 1/2 c minced shallots (about 3) .
  • 4 garlic cloves, minced .
  • 1/2 c whipping cream .
  • 1/2 c madeira wine .
  • 3 tbsps butter .
  • 2 tbsps olive oil .
  • 1 tbsp sliced fresh thyme .
  • 12 oz button mushrooms, thinly sliced

Directions
  • Step #1 Melt 2 tbsps butter with 1 tbsp oil in heavy large skillet over med-heat/flame.
  • Step #2 Add mushrooms & sauté until tender, about 10 mins.
  • Step #3 Add 1/4 c shallots & half of garlic & sauté until shallots are soft, about 3 mins.
  • Step #4 Stir in thyme; season this with salt & pepper.
  • Step #5 Transfer mushroom mixture to medium bowl.
  • Step #6 Melt remaining 1 tbsp butter with 1 tbsp oil in same skillet over medium-high heat.
  • Step #7 Sprinkle top steaks with salt & pepper.
  • Step #8 Add to skillet & cook to desired doneness, about 3 mins per side for medium-rare.
  • Step #9 Transfer steaks to plate.
  • Step #10 Add remaining 1/4 c shallots & garlic to same skillet; Sauté 2 mins.
  • Step #11 Add Madeira & boil until reduced by half, about 3 mins.
  • Step #12 Add broth & boil until mixture is reduced to 2/3 c, about 6 mins.
  • Step #13 Add cream & boil until sauce thickens slightly, about 2 mins.
  • Step #14 Stir in mushroom mixture.
  • Step #15 Spice up sauce to taste with salt & pepper.
  • Step #16 Return steaks to skillet & cook this until heated through, about 1 min.
  • Step #17 Transfer to plates.
  • Step #18 Spoon sauce over & serve.
