Ingredients
20 oz filet mignon steaks (each about 3/4 inch thick) .
1 1/2 c canned beef broth .
1/2 c minced shallots (about 3) .
4 garlic cloves, minced .
1/2 c whipping cream .
1/2 c madeira wine .
3 tbsps butter .
2 tbsps olive oil .
1 tbsp sliced fresh thyme .
12 oz button mushrooms, thinly sliced
Directions
Step #1 Melt 2 tbsps butter with 1 tbsp oil in heavy large skillet over med-heat/flame.
Step #2 Add mushrooms & sauté until tender, about 10 mins.
Step #3 Add 1/4 c shallots & half of garlic & sauté until shallots are soft, about 3 mins.
Step #4 Stir in thyme; season this with salt & pepper.
Step #5 Transfer mushroom mixture to medium bowl.
Step #6 Melt remaining 1 tbsp butter with 1 tbsp oil in same skillet over medium-high heat.
Step #7 Sprinkle top steaks with salt & pepper.
Step #8 Add to skillet & cook to desired doneness, about 3 mins per side for medium-rare.
Step #9 Transfer steaks to plate.
Step #10 Add remaining 1/4 c shallots & garlic to same skillet; Sauté 2 mins.
Step #11 Add Madeira & boil until reduced by half, about 3 mins.
Step #12 Add broth & boil until mixture is reduced to 2/3 c, about 6 mins.
Step #13 Add cream & boil until sauce thickens slightly, about 2 mins.
Step #14 Stir in mushroom mixture.
Step #15 Spice up sauce to taste with salt & pepper.
Step #16 Return steaks to skillet & cook this until heated through, about 1 min.
Step #17 Transfer to plates.
Step #18 Spoon sauce over & serve.
