Cherry Lattice Coffee Cake Recipe

Ingredients
  • 1 (.25 oz) package active dry yeast
  • 1/2 c sliced almonds, toasted
  • 1/4 c warm water (105 degrees to 115 degrees)
  • 1 egg
  • Dash salt
  • FILLING:
  • 2 tbsps butter or margarine, softened
  • 3 tbsps sugar
  • 1 tsp salt
  • 1/2 c sugar
  • 3 c all-purpose flour
  • 2 tbsps all-purpose flour
  • 2 1/2 c fresh or frozen pitted tart cherries, thawed, rinsed & drained
  • 1 c sour cream

Directions
  • Step #1 In a mixing bowl, dissolve yeast in water; let this stand for 5 mins.
  • Step #2 Add sour cream, sugar, butter, egg, salt & 2 c flour; beat until smooth.
  • Step #3 Add enough remaining flour to form a soft dough.
  • Step #4 Turn onto a floured surface; knead until smooth & elastic, abut 6-8 mins.
  • Step #5 Place in a greased bowl, turning once to grease top.
  • Step #6 Cover & let rise in a warm place until doubled, about 1 hr.
  • Step #7 Punch dough down.
  • Step #8 Reserve 1 c dough.
  • Step #9 Divide remaining dough in half.
  • Step #10 Roll each portion into a 9-in.
  • Step #11 circle; place this in greased 9-in.
  • Step #12 round baking pans.
  • Step #13 Combine filling ingredients; spread over dough to within 1/2 in.
  • Step #14 of edge.
  • Step #15 Roll out reserved dough to 1/4-in.
  • Step #16 thickness; cut into 1/2-in.
  • Step #17 strips.
  • Step #18 Make a lattice top over filling.
  • Step #19 Cover & let rise until doubled, about 45 mins.
  • Step #20 Bake at 375 degrees F for 15 mins.
  • Step #21 Cover top this with foil; bake 20 mins longer or until browned.
