Hawaiian Shrimp Skewers Recipe

Ingredients
  • 1/2 lb mushroom caps .
  • 8 oz sweet & sour sauce .
  • 1/2 lb bacon, cut in slices .
  • 2 red peppers, sliced .
  • 16 skewers .
  • 40 oz pineapple chunks (save the juice) .
  • 2 lbs fresh shrimp, peeled & deveined .
  • 1 pint cherry tomatoes

Directions
  • Step #1 Drain pineapple, reserving juice.
  • Step #2 Combine vegetables with shrimp on skewers & place this in shallow pan.
  • Step #3 Mix sweet-and-sour sauce with reserved pineapple juice & pour over kabobs.
  • Step #4 Grill or broil kabobs for 3 to 4 mins on each side or until cooked.
  • Step #5 Baste often with sauce.
