Wing It Grapefruit And Greens Salad For 2 Recipe

Ingredients
  • 3 tbsps extra virgin olive oil .
  • 1 large tart yellow grapefruit, peeled, sectioned & cut into small chunks (not sweet) .
  • 1/2 small cucumber, thinly sliced .
  • 2 tbsps sliced almonds, toasted .
  • Salad .
  • Garnish .
  • 2 tbsps white wine vinegar or champagne vinegar .
  • 3 tbsps dried strawberries, cut into pieces or 1/4 c fresh strawberries, sliced .
  • 3 c mixed greens .
  • 1 c baby spinach leaves .
  • 1/4 c fresh grapefruit juice .
  • 2 scallions, thinly sliced (green & white part) .
  • salt & pepper, to taste .
  • Vinaigrette .
  • 2 tbsps fresh mint leaves (fresh!) .
  • 2-3 tbsps fresh orange juice or clementine juice

Directions
  • Step #1 SALAD: Combine the grapefruit, cucumber, scallions, mixed greens, mint & (dried) strawberries in a bowl.
  • Step #2 VINAIGRETTE: Prepare the vinaigrette by whisking together the two juices, vinegar, salt & pepper.
  • Step #3 Gradually whisk in the olive oil.
  • Step #4 Divide the salad onto two salad plates.
  • Step #5 For best flavor, chill until ready to serve.
  • Step #6 Whisk salad dressing before serving.
  • Step #7 Top with toasted almonds if desired.
