6 oz soft fresh goat cheese (chevre) or crumbled feta cheese .
1/3 c sliced pumpkin seeds, toasted .
1 (8 oz) package cream cheese, softened .
1/2 c dried sweet red peppers, finely sliced .
24 pickled jalapeno peppers, slices well drained or 24 small pimento stuffed olives, well drained .
1/2 c snipped fresh cilantro

Step #2 In med.
Step #3 bowl stir this together the cream cheese & goat cheese until smooth.
Step #4 Cover up & chill for an hr.
Step #5 2.
Step #6 Using a rounded tbsp of cheese mixture, form it around a jalapeno slice or green olive, completely enclosing the jalapeno or olive.
Step #7 * (Mixture will be sticky; moisten hands as necessary.
Step #8 Chill mixture if it becomes too soft to handle).
Step #9 Place shaped balls in a shallow pan.
Step #10 Cover up & chill for 1 hr.
Step #11 3.
Step #12 Roll one-third of the balls in the red sweet pepper, one third in the cilantro, & one third in the pumpkin seeds to coat, leaving some of the white showing.
Step #13 Cover up & chill at least another hr or up to 6 hrs.
Step #14 Serve with picks.
Step #15 *Note: For smaller balls, use a rounded tsp of cheese mixture & omit the jalapeno slices or green olives.
Step #16 Shape into balls.
Step #17 I'm sure you can also use some of the flavored cheeses in this.
