Pecan Caramel Sauce
Ingredients
Crust .
1/2 tsp salt .
1 1/2 c sugar .
1/2 tsp vanilla .
1 c sugar .
3/8 c unsalted butter, cut up .
1 c heavy cream .
1 tsp vanilla .
1/2 tsp salt .
2 c pecans, toasted, cooled, & coarsely sliced .
3/4 c unsalted butter, softened .
2 c flour .
For caramel pecan topping .
1/2 tsp baking powder .
1 large egg
Directions
Step #1 For crust:.
Step #2 Grease a 9 x 13 baking pan, then line with foil wrap, leaving 2 inch overhang on both ends.
Step #3 Then grease foil wrap.
Step #4 Mix flour, baking powder, & salt in small bowl.
Step #5 Beat together butter & sugar in large bowl at medium to high speed with mixer until pale & fluffy, about 3-5 mins.
Step #6 Beat in egg & vanilla.
Step #7 Reduce to lowish speed & add flour mixture & mix until just mixd.
Step #8 Press dough evenly onto bottom of prepared baking pan, if necessary use plastic wrap on top of dough to prevent sticking to fingers.
Step #9 Chill until firm about 20 mins.
Step #10 While crust chills, preheat your trusty oven to 375 degrees.
Step #11 Bake crust until golden brown, about 30 mins.
Step #12 Cool on rack for about 20 mins & prepare topping.
Step #13 For Topping:.
Step #14 Cook sugar in heavy saucepan over moderate heat, undisturbed until it begins to melt.
Step #15 Continue to cook, stirring every once in awhile with fork, until sugar is melted to deep golden caramel.
Step #16 Tilt pan & carefully pour in cream - caramel will harden & steam vigorously.
Step #17 Cook over moderately low heat, stirring, until caramel is dissolved.
Step #18 Remove from heat & stir in the butter, salt, vanilla, & pecans.
Step #19 Immediately spread topping over cooled crust & bake this until bubbling, about 20 mins.
Step #20 Cool completely about 2 hrs or so.
Step #21 Run heavy knife under hot water, wipe dry, then cut confection into 2 inch triangles, diamonds, or squares.
