Mary's Low Sodium Brisket Recipe

Ingredients
  • 4 lbs beef brisket .
  • 1 1/2 c red wine vinegar .
  • 1 tbsp celery seeds .
  • 6 oz beer .
  • 2 tbsps low sodium soy sauce .
  • 4 tbsps worcestershire sauce .
  • 2 1/2 c no-salt-added ketchup .
  • 1 1/2 c low-sodium chili sauce .
  • 1 1/2 c water .
  • 1 dash Tabasco sauce .
  • 2 garlic cloves, minced .
  • 3/4 c lemon juice .
  • 1/2 c prepared mustard .
  • 3/4 c brown sugar .
  • 1/8 tsp pepper

Directions
  • Step #1 Poke holes all over brisket with fork.
  • Step #2 Mix all ingredients except brisket, & marinate brisket in 1/2 of the sauce overnight.
  • Step #3 Place whole brisket on hot grill to sear & brown fat.
  • Step #4 Remove from grill & place this in foil wrapware pan.
  • Step #5 Cover up pan tightly with foil wrap, & cook on low heat for about 4 hrs, close hood, or until meat is tender.
  • Step #6 For best results, use a meat thermometer.
  • Step #7 It should be 170 degrees F for medium.
  • Step #8 Slice brisket very thinly across grain at an angle.
  • Step #9 Heat remaining 1/2 of sauce, pour over slices & serve.
  • Step #10 Serving size = 118g = 4.
  • Step #11 1 oz per serving which is what you can have on a Renal Diet.
