Roasted Fennel Wedges Recipe

Ingredients
  • 2 large fennel bulbs .
  • 2 tbsps olive oil

Directions
  • Step #1 preheat the oven to 180c/350f.
  • Step #2 trim the hard round stalks at the top of the fennel bulbs & discard the outer layers.
  • Step #3 cut the remainder into thin wedges & place this In a large-ish shallow roasting tin.
  • Step #4 drizzle over the olive oil & toss to coat, then season to taste with salt & fresh ground black pepper.
  • Step #5 place fennel in the oven & roast for 55 mins until softened & lightly browned, stirring once or twice to ensure even cooking.
