Japanese Potato Salad (with Apple!) Recipe

Ingredients
  • 1 lb russet potatoes .
  • 1 tsp yellow mustard (a touch of Dijon mustard is also nice) .
  • 1/2 cucumber, thinly sliced in a tsp of salt (see directions) .
  • 1/2 small sweet onion, thinly sliced (see directions) .
  • 1/2 c mayonnaise (I use Kewpie brand or Miracle Whip) .
  • 3 ham slices, cut into small squares (sandwich meat slices) .
  • 1-2 slice fuji apples (about 1/8 inch slices)

Directions
  • Step #1 Boil the unpeeled potatoes.
  • Step #2 Meanwhile, cut the cucumber lengthwise & remove the seeds (or use english cucumbers & skip this step.
  • Step #3 ) Cut the cucumber into thin slices & place them in a small bowl.
  • Step #4 Add one tsp salt & mix well; set aside.
  • Step #5 Cut the onion into paper thin slices & soak them in cold water until you're ready to use them.
  • Step #6 When the potatoes are done, remove the skins & cut the potatoes lenghtwise, then cut them into pieces about 1 inch wide.
  • Step #7 Wash the cucumber with water & squeeze out the water out.
  • Step #8 Also squeeze water from the onion.
  • Step #9 Place the potatoes, cucumber & onion slices, ham & the rest of the ingredients In a large-ish bowl & mix well.
  • Step #10 Spice up with salt & pepper to taste.
  • Step #11 Optional: Add julienned carrots for more color.
