1/2 lb white button mushrooms (or your choice of specialty mushrooms eg, shitake) .
1/4 c fresh cilantro (if desired can be substituted with fresh parsley, 1 tsp dried cilantro) .
2 c plum tomatoes, sliced .
8 oz garlic, minced (don't skimp on this) .
5 tbsps olive oil .
4 boneless chicken breasts, cooked & sliced
Directions
Step #1 Cook bowtie pasta (preferably whole wheat) according to package directions.
Step #2 Cook garlic, stirring very often in hot oil in large skillet over medium high heat until lightly browned (don’t over cook or it will become bitter.
Step #3 Add mushrooms tomatoes green onions & red pepper flakes.
Step #4 Cook & stir 3-4 mins.
Step #5 Add broth, simmer to reduce slightly.
Step #6 Add chicken, pasta & spice (if desired) Try cilantro dried if you have not tried it.
Step #7 Or use parsley if cilantro is not to your taste.
Step #8 Heat though, & garnish with cilantro or parsley if desired.
Step #9 (I like the fresh variety about a ¼ c, my husband is not so fond of it, so I use either dried cilantro 1 tsp or fresh parsley.
Step #10 • Don’t worry about the amount of garlic.
Step #11 It truly does become, as the title says sweet.
