Shrimp With Tomatoes, Fennel And Oregano Recipe

Ingredients
  • 6 tbsps olive oil .
  • 1 1/4 lbs tomatoes, sliced .
  • 3/4 tbsp dry crushed red pepper (adjust this according to your taste, because it is pretty spicy as is) .
  • 1 tbsp minced fresh oregano, crumbled or 1 tsp dried oregano, crumbled .
  • 6 oz feta cheese, crumbled .
  • 32 large uncooked shrimp, peeled, deveined .
  • 1 large onion, sliced .
  • 1 medium fennel bulb, trimmed, halved, thinly sliced .
  • fresh lemon juice .
  • cooked pasta noodles

Directions
  • Step #1 Heat 4 tbsps oil in heavy large skillet over med-heat/flame.
  • Step #2 Add onion, fennel & red pepper.
  • Step #3 Sauté until vegetables are tender, about.
  • Step #4 6 mins.
  • Step #5 Add tomatoes & oregano.
  • Step #6 Spice up with salt & pepper.
  • Step #7 Reduce heat to low & cook 5 mins.
  • Step #8 Transfer to bowl.
  • Step #9 (Can be prepared 4 hrs ahead.
  • Step #10 Cover up & chill in the fridge.

  • Step #12 Heat remaining 2 tbsps oil in heavy large skillet over medium-high heat.
  • Step #13 Add shrimp & cook this until just pink & opaque, about 3 mins.
  • Step #14 Add vegetables & heat through.
  • Step #15 Stir in cheese.
  • Step #16 Spice up to taste with lemon juice, salt & pepper.
