South Beach Chicken Recipe

Ingredients
  • 1/2 tbsp garlic powder .
  • 4 slices reduced-fat mozzarella cheese .
  • 1/4 tsp salt .
  • 2 tbsps extra virgin olive oil .
  • 1 c reduced-fat ricotta cheese .
  • 1 c crushed tomatoes .
  • 4 boneless skinless chicken breast halves .
  • 1/4 tsp ground black pepper .
  • 1/2 tsp dried oregano

Directions
  • Step #1 Combine the ricotta with the oregano, salt, & pepper.
  • Step #2 Blend together.
  • Step #3 Pretreat a large baking dish with PAM or rub the bottom with some olive oil so it doesn't stick.
  • Step #4 Rub the chicken with the garlice powder.
  • Step #5 Heat the oil in a large skillet over medium-high heat.
  • Step #6 Add the chicken adn cook for 10 mins per side.
  • Step #7 You'll be tempted to move the chicken around but don't for at least 7 mins, then check to see that it's not burning.
  • Step #8 Thurn it over & do the same on the other side.
  • Step #9 Place the chicken breasts, side by side, in a lorge baking dish & allow this to cool.
  • Step #10 Preheat the oven to 350 degrees F.
  • Step #11 Spoon 1/4 c of the cheese mixture & 1/4 c tomatoes onto each chicken breast.
  • Step #12 You can be liberal.
  • Step #13 Top each chicken breast with 1 slice mozzarella.
  • Step #14 Bake for 20 mins, or until a thermometer inserted in the chicken registers 170 degrees F.
