Namora (semolina Cake - Baklava) Recipe

Ingredients
  • 1/2 c water .
  • 3 tsps coconut .
  • 1 tsp baking powder .
  • 1 c sugar .
  • 1 c unsalted butter, melted .
  • 1 lemon, juice of .
  • 3 c sugar (for syrup) .
  • blanched almonds, split .
  • 3 c fine semolina .
  • 2 c water (for syrup)

Directions
  • Step #1 Cream the butter & one c sugar.
  • Step #2 Stir in a 1/2 c water.
  • Step #3 Sift together the semolina, baking powder, & stir in theto the butter mixture to form a smooth batter.
  • Step #4 Preheat the oven to 350°F.
  • Step #5 Lightly grease an 8-by-12-inch cake pan & pour in the batter.
  • Step #6 Spread it evenly with the back of a spoon & then score across the top of the cake.
  • Step #7 Place an almond in the center of each diamond.
  • Step #8 Bake in the preheated oven for 35-40 mins, when the cake should be firm & lightly browned.
  • Step #9 Combine three c sugar, lemon juice, & water in a small saucepan.
  • Step #10 Bring to a boil.
  • Step #11 Reduce heat & let simmer 10 mins or until slightly thickened.
  • Step #12 Cool.
  • Step #13 Pour cooled syrup, spoonfuls at a time, over the hot cake.
  • Step #14 Stop when the cake will not absorb any more & set the cake aside to cool before serving.
