Ingredients
1/2 tsp lime juice .
1 (14 oz) can coconut milk .
4 c cold water .
1/8 tsp salt .
For Coconut sauce .
13 tbsps sugar .
1 c black sticky rice .
For Pudding .
1/4 tsp salt
Directions
Step #1 Rinse the rice in a sieve under cold running water.
Step #2 Place rice in a bowl & add enoough cold water to cover the rice at least 1 inch.
Step #3 Let rice stand overnight or at least 8 hrs.
Step #4 (Don't skip this step!).
Step #5 Drain rice.
Step #6 In a heavy saucepan, mix the rice & the 4 c water.
Step #7 Cover up pan & bring to a boil.
Step #8 Lower heat & maintain a gentle simmer until all the liquid is absorbed & rice is tender but not mushy.
Step #9 This takes 1 1/2 to 1 3/4 hrs.
Step #10 The texture of the pudding should be very thick but still spoonable.
Step #11 Toward the end of cooking, be sure to stir every once in awhile to prevent any scorching or sticking.
Step #12 If the rice looks as though it is too dry, add a little more water.
Step #13 Remove from the pot & stir in the the sugar & salt.
Step #14 Let cool slightly.
Step #15 Then add the lime juice.
Step #16 For Coconut sauce:.
Step #17 In medium saucepan,mix the coconut milk & salt.
Step #18 Simmer, stirring until the liquid has thickened slightly, 15-20 mins.
Step #19 Pour into a small bowl & let cool.
Step #20 To serve, spoon rice pudding into individual bowls.
Step #21 Spoon coconut sauce over each serving & let each person stir it into the rice as they eat.
Step #22 Can be eaten cold but warm is best.
