Ingredients

2 tbsps olive oil .
3 eggs, at about room temp .
1 pinch salt .
2 c spelt flour

Directions

Step #1 Sift the flour & salt.
Step #2 Beat the eggs with the oil.
Step #3 Make a well in the flour & then stir in the the eggs & oil with a spoon.
Step #4 Finish mixing with hands & then knead on a lightly floured surface.
Step #5 Knead until the mixture "comes together".
Step #6 Cover up in cling wrap & allow to rest for 20 mins.
Step #7 Roll with a pasta press or rolling pin.
