Buttermilk Pancakes Recipe

Ingredients
  • pure maple syrup or fruit jam .
  • 1/2 tsp baking soda .
  • 4 1/2 oz unbleached all-purpose flour .
  • 1 c buttermilk .
  • 1/4 tsp table salt .
  • 1 large egg .
  • 1 tbsp canola oil or safflower oil, more for the griddle

Directions
  • Step #1 In a medium bowl, baking soda, whisk the flour, & salt until well mixed.
  • Step #2 Add the egg, oil, & buttermilk & whisk only until no dry flour is visible; the batter should be lumpy.
  • Step #3 Heat a griddle over med-heat/flame until a sprinkle of water sizzles carefully across the surface.
  • Step #4 Lightly oil the surface & drop the batter by generous tbsps about 2 inches apart onto the griddle.
  • Step #5 Cook each pancake until the bottom is golden brown, tiny bubbles appear around the edges, & the edges look dry.
  • Step #6 Flip & cook this until the center of each pancake rises & is firm when poked in the center & the bottom is golden.
  • Step #7 Serve as soon as possible on warmed plates with syrup or jam.
