Tuna Salad Twist Recipe

Ingredients
  • 1 (250 g) can corn kernels .
  • 1 small cucumber .
  • 85 g canned tuna .
  • 2 tbsps red bell peppers .
  • 1 small lemon .
  • 2 tbsps pure olive oil .
  • 1/2 tsp ground pepper .
  • 1 head iceberg lettuce .
  • 3 tbsps balsamic vinegar

Directions
  • Step #1 Drain tuna from can.
  • Step #2 Slice lemon into two.
  • Step #3 Squeeze the juice of one of the halves & keep the other half for garnishing.
  • Step #4 Prepare dressing by mixing Balsamic Vinegar, olive oil & juice from half a lemon.
  • Step #5 Cube the cucumber without peeling.
  • Step #6 Chop Red Bell Pepper into bite size cubes smaller than cucumber cubes.
  • Step #7 In a bowl, corn, mix tuna, cucumber & bell Pepper.
  • Step #8 Toss with dressing.
  • Step #9 Serve on a bed of washed & drained Iceberg Lettuce Leaves.
  • Step #10 Slice the left over lemon half & make twists.
  • Step #11 Garnish salad with these.
  • Step #12 Top with freshly milled peppercorns.
