Lobster Butter - Beurre De Homard Recipe

Ingredients
  • salt & pepper .
  • 1 tbsp sherry wine .
  • 1 tbsp lime juice (fresh is best) .
  • 1 (4 oz) lobster tails, cooked & shelled (may substitute crab or shrimp for a different flavor) .
  • 1/4 lb butter, softened (no substitutions)

Directions
  • Step #1 Place all ingredients in the container of a food processor/blender & whirl until completely incorporated.
  • Step #2 Taste & correct seasoning if necessary.
  • Step #3 Pack into a small mold, pretty dish or roll this into a cylinder & put in the fridge.
  • Step #4 To serve: spoon onto hot, grilled fish or seafood & allow to melt.
