Lemon-mustard Sauce Recipe

Ingredients
  • 2 tsps Dijon mustard .
  • cayenne pepper, to taste .
  • 2 tbsps lemon juice .
  • 1/3 c flour .
  • 1 pinch salt .
  • 1/3 c butter .
  • 3 egg yolks .
  • 1 1/2 c chicken stock

Directions
  • Step #1 In a heavy-based medium saucepan, melt butter.
  • Step #2 Add flour all at once.
  • Step #3 Cook, stirring constantly, for 3 mins.
  • Step #4 Add stock all at once.
  • Step #5 Blend mixture with a whisk.
  • Step #6 Cook mixture over low heat/flame for 5 or 6 mins, stirring often.
  • Step #7 Gently beat in egg yolks & add lemon juice, whisking constantly.
  • Step #8 Add mustard & mix.
  • Step #9 Add salt.
  • Step #10 Cook 1 or 2 mins longer.
  • Step #11 Add cayenne pepper a little at a time, stirring & tasting until desired degree of "heat" is achieved.
