Pork Carnintas With Caramelized Onions And Chipotle Recipe

Ingredients
  • 2 tsps fresh lime juice .
  • 1 canned canned chipotle chile, sliced .
  • 1 (14 oz) can low sodium chicken broth .
  • 2 c onions, sliced .
  • 1 tbsp fresh cilantro, sliced .
  • 1 1/2 lbs boston butt, trimmed & cut in 1 inch cubes .
  • 6 garlic cloves, minced .
  • 1 tsp pepper .
  • 2 bay leaves .
  • 1 tsp salt .
  • 2 tsps fresh oregano, sliced .
  • 2 tsps olive oil .
  • 1/2 tsp cumin

Directions
  • Step #1 Combine 1st 4 ingredients In a large-ish zip-top plastic bag; seal & shake to coat.
  • Step #2 Refrigerate 8 hrs or overnight.
  • Step #3 Heat oil In a large-ish nonstick skillet over med-high.
  • Step #4 Remove pork from bag.
  • Step #5 Add pork to pan; cook 10 min, browning on all sides.
  • Step #6 Remove from pan.
  • Step #7 Coat pan with cooking spray.
  • Step #8 Add onion & garlic; saute 5 min or til lightly browned.
  • Step #9 Stir in salt, cumin, & chile.
  • Step #10 Return pork to pan & add broth.
  • Step #11 Bring to a simmer; cover.
  • Step #12 Cook 2 hrs or til very tender.
  • Step #13 Remove from heat & discard bay leaves.
  • Step #14 Stir in cilantro & juice.
