Sesame Soy Chicken Recipe

Ingredients
  • 1 tbsp sesame seeds, toasted .
  • 1 tbsp hot pepper oil .
  • 1/2 c fresh lime juice .
  • 2 tbsps fresh ginger, grated .
  • 6 skinless chicken thighs, skin & visable fat removed .
  • 1 c onions, finely sliced .
  • 1 tsp lime rind, grated .
  • 1 garlic clove, minced .
  • 6 skinless chicken legs, skin & visable fat removed .
  • 1/2 c sherry wine .
  • 1/4 c orange juice concentrate .
  • 1 tbsp sugar .
  • 1/4 c light soy sauce

Directions
  • Step #1 In a bowl, orange juice concentrate, rind, sugar, sherry, lime juice, soy sauce, mix onion, garlic, ginger, garlic & oil & set aside.
  • Step #2 Rinse chicken pieces & pat dry.
  • Step #3 Arrange the chicken in a baking dish & pour lime mixture over all, turning each piece to coat completely.
  • Step #4 Cover up & marinate chicken in refrigerator several hrs; turning twice during that time.
  • Step #5 Preheat oven to 400F degrees F.
  • Step #6 Remove the chicken from the marinade.
  • Step #7 Bake the chicken 35 mins unitl done & then broil 5 mins, turning pieces in cooking juice to maximize flavor.
  • Step #8 Sprinkle top with sesame seeds before serving.
