Tarragon-pecan Salmon Recipe

Ingredients
  • 1/4 c fine dry breadcrumbs .
  • 1 tbsp dijon-style mustard .
  • 2 tsps fresh tarragon, coarsely sliced .
  • 2 tsps fresh tarragon, coarsely sliced .
  • 2 tsps orange zest .
  • 1 tsp honey .
  • 2 tbsps olive oil .
  • 1/4 c pecans, finely sliced .
  • 2 tsps fresh parsley, coarsely sliced .
  • 1 tbsp margarine or butter, melted .
  • 1/4 c orange juice .
  • 1 lemon .
  • 24 oz salmon fillets

Directions
  • Step #1 Rinse fish; pat dry with paper towels.
  • Step #2 Place fish in a plastic bag set in a deep bowl; set aside.
  • Step #3 Combine orange peel, & the 2 tsps tarragon; pour over fish, olive oil, orange juice, turning to coat.
  • Step #4 Seal bag; let this stand at about room temp for 20 mins.
  • Step #5 Meanwhile, preheat your trusty oven to 425F degees F.
  • Step #6 In a small dish mix mustard, melted margarine or butter, & honey; set aside.
  • Step #7 In another dish mix bread crumbs, pecans, parsley, & the remaining 2 tsps tarragon.
  • Step #8 Remove salmon from marinade; discard marinade.
  • Step #9 Place fish, skin side down, on greased shallow baking pan.
  • Step #10 Brush with mustard mixture; sprinkle with crumb mixture, pressing crumbs carefully to coat.
  • Step #11 Bake, uncovered, for 12 to 16 mins or until fish just flakes easily with a fork.
  • Step #12 If desired, sprinkle with extra tarragon & parsley.
  • Step #13 Garnish with lemon slices.
