Linguine With Asparagus And Goat Cheese Recipe

Ingredients
  • 1/4 c dry white wine .
  • 1/2 c red bell peppers, thinly sliced .
  • 4 oz neufchatel cheese, softened .
  • 1/2 lb fresh asparagus .
  • 2 oz goat cheese, crumbled .
  • 2 tbsps fresh lemon juice .
  • 1/4 tsp pepper .
  • 1/2 c low sodium chicken broth .
  • 1/4 c shallots, sliced

Directions
  • Step #1 Put water for linguine or spaghetti on to boil.
  • Step #2 Snap off tough ends of asparagus.
  • Step #3 Remove scales from stalks with a knife or vegtable peeler, if desired.
  • Step #4 Cut asparagus into 1-inch pieces.
  • Step #5 Set aside.
  • Step #6 Combine chicken broth, sliced shallots, white wine, pepper, & bell pepper in a saucepan.
  • Step #7 Bring to a boil; add asparagus.
  • Step #8 Reduce heat & let simmer 5 mins.
  • Step #9 Add cheeses & lemon juice; cook over low heat/flame, stirring constantly, until cheeses melt.
  • Step #10 Set aside; keep warm.
  • Step #11 Cook pasta according to package directions, omitting salt & fat; drain.
  • Step #12 Place pasta in a serving bowl.
  • Step #13 Add asparagus mixture & sweet red pepper; toss carefully.
  • Step #14 Serve as soon as possible.
