Slowburn Goat Curry With Friend Roti Recipe

Ingredients
  • 1 tsp white sugar .
  • 1-2 c water .
  • 1/2 c warm water .
  • 4 medium potatoes (peeled & sliced) .
  • vegetable oil (for frying) .
  • 1/4 c warm whole milk or skim milk .
  • 1 1/2 c whole-wheat flour .
  • 2 1/2-3 lbs goat meat, shoulder (bone in) .
  • curry .
  • 1/2 tsp baking powder .
  • 1 1/2 tsps salt .
  • 1/4 c sliced fresh cilantro .
  • 1-2 coarsley sliced white onion .
  • roti (makes 6 - 8 pieces) .
  • 1 pinch chili powder (optional) .
  • 4-6 serano chilies (sliced seeds & all) .
  • 1 tsp ground cumin .
  • 1 dash cinnamon .
  • 4 tbsps olive oil (to cover bottom of pan) .
  • 1 tsp melted butter .
  • 1/2 tsp salt .
  • 1 tsp fresh ground ginger .
  • 2 tbsps curry powder (get an authentic ethinic curry, not McCormick) .
  • sliced scallions (to garnish, optional but so good) (optional) .
  • 3 smashed garlic cloves .
  • 6 oz coconut milk (1/2 can)

Directions
  • Step #1 Before you make curry, prepare Roti dough:.
  • Step #2 In a large bowl, salt, mix the flour, sugar, baking powder.
  • Step #3 Make a well in the center & add warm water, melted butter & milk, mixing it with the flour until a soft dough is formed.
  • Step #4 If dough is still too dry add tsps of water till your dough is soft, slightly sticky, but not wet.
  • Step #5 Dust kneading board with flour; place the dough on the board & knead for 2 mins or so.
  • Step #6 Cover up with plastic wrap & let rest for an hr or so.
  • Step #7 To make Curry:.
  • Step #8 Wash the goat & set a pot of water to boil.
  • Step #9 Enought water to cover the meat.
  • Step #10 Add goat to boiling water.
  • Step #11 Let boil till foam comes to top.
  • Step #12 Skim off till no more arises.
  • Step #13 (15 - 20 min depending how much goat you put in.
  • Step #14 ).
  • Step #15 Drain & set meat aside to cool.
  • Step #16 In a heavy bottomed pot, cover bottom with olive oil, & heat.
  • Step #17 When oil shimmers, & serano's, add sliced onions, cook till onions become translucent.
  • Step #18 Keep heat low to medium, you don't not want to burn onions or you will impart a burnt taste to whole dish.
  • Step #19 When onions are turning golden, curry powder, cinnamon, add cumin, stir & cook for 2 mins.
  • Step #20 Then shut off heat.
  • Step #21 Debone goat & slice meat finely.
  • Step #22 Add all meat back to the onions.
  • Step #23 (Make sure there are no bone chips, because it wil be impopssible to find them once you add the potatoes!).
  • Step #24 Add water, bring back up to a boil.
  • Step #25 Add salt & coconut milk.
  • Step #26 Cover up & let simmer for 20 - 40 mins.
  • Step #27 Taste sauce.
  • Step #28 If it is too hot add more coconut milk.
  • Step #29 Too bland, you can add a pinch of chili powder.
  • Step #30 (and I mean a pinch, a 1/4 tsp can ruin an entire pot) Now test goat.
  • Step #31 If meat is tender, add potatoes.
  • Step #32 If meat is very chewy, wait a bit longer till meat softens up.
  • Step #33 When meat is ALMOST as tender as you want it, add potatoes & recover pot.
  • Step #34 Potatoes sliced thinly can take 10 - 20 mins to soften up.
  • Step #35 Check after 10 mintues.
  • Step #36 If sauce is too thick, add water.
  • Step #37 Potatoes will absorb water, so keep a close eye on them.
  • Step #38 ALSO: Don't stir this too much, or you will break your potatos & you will have potato soup.
  • Step #39 When everything is tender, & potatoes are done, add garlic & cilantro.
  • Step #40 Stir, & cook for 5 mintues.
  • Step #41 Shut off heat.
  • Step #42 Now its time to make the Roti.
  • Step #43 To make ROTI:.
  • Step #44 Divide the dough into three-inch balls.
  • Step #45 Dust board.
  • Step #46 Roll out the dough balls into 6-7 inch circles.
  • Step #47 Dust each flat as you create them, before you stack them so they do not stick together.
  • Step #48 In a cast iron pan, (or a pan that can get very hot) Add vegetable oil.
  • Step #49 Test oil by dropping small bit of dough.
  • Step #50 If it comes to the top as soon as it hits the bottom of the pan, oil is ready.
  • Step #51 Place flat carefully in oil, it will sizzle & bubble up immediatly.
  • Step #52 Push dough under oil to force air into it.
  • Step #53 It will brown very quickly (30 - 60 seconds) Flip once & place on paper towels to drain.
  • Step #54 Make all dough at once.
  • Step #55 Salt them while they are still hot.
  • Step #56 Plating : I enjoy a meal I can sink my teeth, & hands into.
  • Step #57 I serve this meal In a large-ish shallow bowl.
  • Step #58 Place the sliced scallions in a bowl off to the side, or sprinkle it over the curry.
  • Step #59 On a seperate plate, stack the roti.
  • Step #60 The idea is to spoon the curry into small bits of the roti & pop into your mouth.
  • Step #61 Serve this with cold beer & lots of napkins.
  • Step #62 Expect a little splatter but a lot of laughs.
  • Step #63 This meal is unbelievablely good.
  • Step #64 And your friends & loved ones will never forget it.
