Shredded Chicken And Walnut Sauce Recipe

Ingredients
  • 3 slices white bread or 2 pita breads .
  • 1 tsp paprika, divided .
  • 1/2 c finely sliced onions .
  • 1 1/2 tsps salt, divided .
  • 1/4 tsp black pepper .
  • 3 c water .
  • 4 boneless skinless chicken breasts or 1 (3 1/2 lb) chickens, cut in 8 pieces .
  • 1 1/2 c walnuts .
  • sliced black olives, to garnish

Directions
  • Step #1 In a large pan, 20-50 mins, simmer the chicken with water & 1/2 tsp salt until cooked, depending on whether it is bone in or not.
  • Step #2 Strain through cheesecloth or a fine strainer & set chicken aside to cool.
  • Step #3 Boil the water stock down until you have 1 1/2 c.
  • Step #4 Remove the cooled chicken from the bones while the stock is reducing & chop into 1-inch pieces.
  • Step #5 In a food processor/blender or mixer, onions & cooled, mix the walnuts, reduced stock.
  • Step #6 Break the bread into chunks & add to the mixer, along with 1/2 tsp paprika, 1 tsp salt & the pepper.
  • Step #7 Blend to a smooth paste.
  • Step #8 Put the chicken pieces in a bowl, pour the walnut paste over, & toss carefully to mix.
  • Step #9 Garnish with the remaining paprika & sliced black olives.
  • Step #10 Particularly nice served with fresh fruit.
