Sticky Date Muffins With Toffee Sauce Recipe

Ingredients
  • 1/4 c vegetable oil .
  • 1 c milk .
  • 240 g seeded sliced dates .
  • 2 c self raising flour .
  • 3/4 c brown sugar .
  • TOFFEE SAUCE .
  • 300F ml cream .
  • 1/4 tsp baking soda .
  • 1 egg, lightly beaten .
  • 1/2 c water .
  • 1 1/2 c brown sugar

Directions
  • Step #1 Combine dates & water in a pan, bring to boil.
  • Step #2 Remove from heat & stir in the baking soda.
  • Step #3 let this stand 5 mins.
  • Step #4 Sift flour into a bowl, add all other ingredients & stir until just mixd.
  • Step #5 Spoon into muffin pan, any size, but cooking times based on normal muffin pan.
  • Step #6 Bake in a moderately hot oven for about 20 mins.
  • Step #7 Toffee Sauce:.
  • Step #8 Combine sugar & cream, stir over heat until the sugar dissolves, simmer for 5 mins.
  • Step #9 Serve muffins warm or cold with toffee sauce & thick cream.
