Salt And Pepper Prawns (shrimp) Recipe

Ingredients
  • 2 tsps salt .
  • 1 tbsp flaked sea salt .
  • 3 tsps ground black pepper .
  • 2 c peanut oil .
  • 1/2 c rice flour .
  • 1-2 lemon, cut into wedges to serve .
  • 24 medium green prawns (about 1.4 kilos)

Directions
  • Step #1 Peel, devein & butterfly the prawns, leaving the tails intact.
  • Step #2 Combine the flour salt & 2 tsps of the ground peppercorns In a large-ish bowl.
  • Step #3 Add prawns & toss to coat in the flour mixture.
  • Step #4 Shake off the excess flour from each prawn.
  • Step #5 Heat the oil in a wok or frypan until very hot.
  • Step #6 Cook prawns in small batches for about 2 mins or until crisp.
  • Step #7 Transfer prawns to a plate lined with paper towel to drain.
  • Step #8 In a seperate bowl, mix the salt flakes with the remaining tsp of ground peppercorns.
  • Step #9 Place prawns on a serving plate & sprinkle with the salt & pepper mix.
  • Step #10 Serve with lemon wedges.
