Sweet And Sour Halibut With Vegetable Noodle Stir-fry Recipe

Ingredients
  • 1 c chicken stock .
  • 4 halibut fillets (1 1/2 lb total) .
  • 2 tsps cornstarch .
  • 1 tsp ground ginger .
  • 1/2 lb rice noodles .
  • 2 garlic cloves, minced .
  • 1/4 c orange juice .
  • 1 sweet red pepper, sliced .
  • 3 tbsps granulated sugar .
  • 2 c mushrooms, quartered .
  • 2 tsps soy sauce .
  • 1 zucchini, sliced .
  • 2 tbsps tomato paste .
  • 2 tsps vegetable oil .
  • 2 tbsps red wine vinegar

Directions
  • Step #1 Soak noodles in bowl of boiling water until tender (about 6 mins); drain & set aside to chill in cold water.
  • Step #2 Meanwhile, in separate bowl, tomato paste, sugar, soy sauce, cornstarch, mix stock, orange juice, vinegar, ginger & garlic.
  • Step #3 Set aside.
  • Step #4 In large nonstick skillet, heat 2 tsp of the oil over medium high heat.
  • Step #5 Fry halibut, turning once, until golden & flaky (about 6 mins).
  • Step #6 Add stock mixture.
  • Step #7 Boil until thickened, about 2 mins.
  • Step #8 Meanwhile, in separate skillet, heat remaining vegetable oil over high heat.
  • Step #9 Stir-fry red pepper, mushrooms, & zucchini until tender (about 2 mins).
  • Step #10 Add noodles & stir-fry until hot.
  • Step #11 Put the noodle mixture in a bowl & top this with fish & sauce.
