Taqueria Style Tacos - Carne Asada Recipe

Ingredients
  • 1 tsp ground black pepper .
  • For the Marinade .
  • 1 tsp paprika .
  • 1/2 c soy sauce .
  • For the Onion Relish .
  • 2 limes, juice of .
  • 1 tsp garlic powder .
  • 1/2 c sliced fresh cilantro .
  • 1/2 c olive oil .
  • 4 garlic cloves, peeled .
  • 1 white onion, sliced .
  • 2 large tomatoes, sliced .
  • 2 jalapeno peppers, sliced .
  • 1 tsp salt .
  • 1 tsp dried oregano .
  • 1 lime, juice of .
  • 1/3 c white vinegar .
  • 1 tsp chili powder .
  • 2 limes, cut into wedges .
  • 3 lbs flank steaks .
  • 1 tsp ground cumin .
  • 1 white onion, quartered .
  • 4 dried red chile pods .
  • 1 (32 oz) package corn tortillas .
  • For the Taco Garnish .
  • For the Pureed Chile Salsa .
  • 4 garlic cloves, minced .
  • 1 pinch salt & pepper, to taste .
  • 2 c grated Cotija cheese (optional) .
  • 1 tsp white pepper

Directions
  • Step #1 Lay the flank steak In a large-ish glass baking dish.
  • Step #2 In a medium bowl, whisk together the vinegar, soy sauce, 4 cloves of garlic, juice of two limes & olive oil.
  • Step #3 Spice up with salt, white pepper, oregano, garlic powder, chili powder, black pepper, cumin & paprika.
  • Step #4 Whisk until well mixed, then pour over the steak in the dish.
  • Step #5 Turn over once to coat both sides.
  • Step #6 Cover up with plastic wrap, & marinate for 1 to 8 hrs.
  • Step #7 NOW THE ONION RELISH: In a small bowl, stir this together 1 sliced white onion, cilantro & the juice of 1 lime.
  • Step #8 Set aside to use as a relish for the tacos.
  • Step #9 FOR THE PUREED CHILE SALSA: Heat a skillet over medium-high heat.
  • Step #10 Toast chile pods in the skillet for a few mins, & then remove to a bowl of water to soak for about 30 mins.
  • Step #11 Preheat the oven to 450 degrees F (230 degrees C).
  • Step #12 Place the tomatoes, 1 onion, jalapenos & 4 cloves of garlic onto a baking sheet.
  • Step #13 Roast in the oven for about 20 mins, until toasted but not burnt.
  • Step #14 Place the roasted vegetables & soaked chile pods into a mixer or food processor/blender, along with salt & pepper.
  • Step #15 Puree until smooth.
  • Step #16 Heat vegetable oil In a large-ish skillet over medium-high heat.
  • Step #17 Cut the marinated flank steak into cubes or strips.
  • Step #18 Cook, stirring constantly, until the meat is cooked through & most of the liquid has evaporated.
  • Step #19 Warm the tortillas in a skillet for about a min on each side to make them pliable.
  • Step #20 Tortillas may also be warmed in a microwave oven.
  • Step #21 Arrange two or three tortillas on a plate & lay a generous amount of beef over them.
  • Step #22 Top with a sprinkle of the onion relish & a large spoonful of the pureed salsa.
  • Step #23 Add as much cheese as you like.
  • Step #24 Garnish with lime wedges & serve.
